- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- 1 cup frozen peas (optional)
Instructions
- Place the chicken breasts at the bottom of the slow cooker, ensuring an even base for cooking.
- Add chicken broth, carrots, celery, onion, garlic, dried thyme, dried parsley, salt, and pepper.
- Set the slow cooker on low for 6-8 hours or on high for 3-4 hours.
- Add the egg noodles and frozen peas in the last 30 minutes.
- Shred the chicken with two forks before serving, stirring everything together.

Best eaten fresh the same day; reheats on the stove with a splash of broth if needed.
