Ingredients

- 1.5 lbs chicken breasts, diced
- 4 cups low-sodium chicken broth
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups mixed vegetables (carrots, peas, corn, etc.)
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a slow cooker and sauté onions and garlic until translucent and fragrant, about 3-4 minutes.
- Add the diced chicken breasts and sauté until slightly browned, approximately 4-5 minutes.
- Pour in the chicken broth and add mixed vegetables.
- Stir in Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours.
- Stir in heavy cream and Parmesan cheese about 30 minutes before serving until warmed through.
- Serve hot, garnishing if desired.
Notes
Be sure to sauté the onions and garlic to enhance the flavor. Taste before serving to adjust seasoning.
