Description

A satisfying and comforting stew made with tender chicken, garlic, and Parmesan cheese, perfect for busy weeknights.


Ingredients

  • 1.5 lbs chicken breasts, diced
  • 4 cups low-sodium chicken broth
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups mixed vegetables (carrots, peas, corn, etc.)
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a slow cooker and sauté onions and garlic until translucent and fragrant, about 3-4 minutes.
  2. Add the diced chicken breasts and sauté until slightly browned, approximately 4-5 minutes.
  3. Pour in the chicken broth and add mixed vegetables.
  4. Stir in Italian seasoning, salt, and pepper.
  5. Cover and cook on low for 6-8 hours.
  6. Stir in heavy cream and Parmesan cheese about 30 minutes before serving until warmed through.
  7. Serve hot, garnishing if desired.

Notes

Be sure to sauté the onions and garlic to enhance the flavor. Taste before serving to adjust seasoning.
