- 1 pound beef stew meat, cubed
- 4 cups beef broth
- 2 cups mixed vegetables (carrots, peas, corn, etc.)
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat and brown the beef stew meat until it’s nicely seared.
- In a crockpot, combine the browned beef, beef broth, mixed vegetables, onion, garlic, salt, pepper, Italian seasoning, and diced tomatoes.
- Stir to combine and ensure that all ingredients are well mixed.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors are infused.
- Serve hot and enjoy your nutritious soup!
