Description

A fulfilling and nourishing vegetable beef soup perfect for busy weeknights, made in a slow cooker for maximum flavor.


Ingredients

  • 1 pound beef stew meat, cubed
  • 4 cups beef broth
  • 2 cups mixed vegetables (carrots, peas, corn, etc.)
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the beef stew meat until it’s nicely seared.
  2. In a crockpot, combine the browned beef, beef broth, mixed vegetables, onion, garlic, salt, pepper, Italian seasoning, and diced tomatoes.
  3. Stir to combine and ensure that all ingredients are well mixed.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors are infused.
