Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 1 cup white wine
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup coconut cream or dairy-free cream
  • Fresh parsley for garnish

Instructions

  1. Add the chicken breasts, chicken broth, white wine, onion, garlic, carrots, celery, potatoes, thyme, oregano, salt, and pepper to a slow cooker.
  2. Drizzle olive oil over the mixture.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  4. Stir in the coconut cream about 30 minutes before serving.
