Description

A rich and comforting dish made with slow-caramelised onions, smoky spices, and creamy butter beans. Perfect as a hearty vegetarian meal or flavorful side.


Ingredients

  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 (15-ounce) cans butter beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1 tablespoon butter
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Heat olive oil in a large skillet over medium-low heat.
  2. 2. Add sliced onions and cook slowly for 30–45 minutes, stirring occasionally, until deeply caramelised.
  3. 3. Add garlic, smoked paprika, thyme, and red pepper flakes, and cook for 1 minute until fragrant.
  4. 4. Stir in butter beans and vegetable broth.
  5. 5. Bring to a gentle simmer, then cover and cook for 10–15 minutes.
  6. 6. Stir in butter until melted and incorporated.
  7. 7. Season with salt and black pepper to taste.
  8. 8. Serve hot, garnished with fresh parsley.

Notes

Take your time caramelising onions for best flavor. Add a splash of water if onions start to stick. Adjust seasoning to taste.
