- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- 2 (15-ounce) cans butter beans, drained and rinsed
- 1/2 cup vegetable broth
- 1 tablespoon butter
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- 1. Heat olive oil in a large skillet over medium-low heat.
- 2. Add sliced onions and cook slowly for 30–45 minutes, stirring occasionally, until deeply caramelised.
- 3. Add garlic, smoked paprika, thyme, and red pepper flakes, and cook for 1 minute until fragrant.
- 4. Stir in butter beans and vegetable broth.
- 5. Bring to a gentle simmer, then cover and cook for 10–15 minutes.
- 6. Stir in butter until melted and incorporated.
- 7. Season with salt and black pepper to taste.
- 8. Serve hot, garnished with fresh parsley.
Notes
Take your time caramelising onions for best flavor. Add a splash of water if onions start to stick. Adjust seasoning to taste.
