Description

A quick and nutritious salad featuring roasted sweet potatoes, quinoa, black beans, and vibrant vegetables, perfect for busy weeknight dinners.


Ingredients

  • 1 cup quinoa (rinse before cooking for better texture)
  • 2 cups water
  • 1 medium sweet potato, diced
  • 1 can black beans, drained and rinsed
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine quinoa and water in a pot; bring to a boil. Lower heat, cover, and simmer for 15 minutes until the quinoa is fluffy.
  3. Toss diced sweet potatoes with olive oil, chili powder, salt, and pepper; roast for 20-25 minutes until tender and golden.
  4. Combine the cooked quinoa, black beans, roasted sweet potatoes, diced avocado, and bell pepper in a large bowl while the sweet potatoes are still warm.
  5. Drizzle with lime juice and mix gently to combine all the ingredients.
  6. Garnish with fresh cilantro and serve.

Notes

Rinse quinoa to remove bitterness; adjust lime juice for acidity.
