Ingredients

  • 2 cups fresh spinach, wilted

  • 2 cloves garlic, minced

  • 1 teaspoon chili powder
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils thoroughly under cold water and set them aside.
  2. Heat the olive oil in a large pot over medium heat until it shimmers.
  3. Add the chopped onion and garlic, cooking until soft and fragrant—about 5 minutes.
  4. Stir in the cumin and chili powder, letting them toast for another minute.
  5. Add the lentils and vegetable broth, bringing the mixture to a boil.
  6. Reduce the heat, cover the pot, and let it simmer for about 20-25 minutes until the lentils are tender.
  7. Gently stir in the spinach and cook until wilted, adding salt and pepper to taste.

Notes

For extra flavor, use broth instead of water when cooking lentils.
