Ingredients

  • 1 (454 g) block of super firm tofu, pat dry
  • 1 tbsp avocado oil
  • 3 tbsp tamari or soy sauce, divided
  • 2 tbsp cornstarch or arrowroot powder
  • 1 tsp garlic powder
  • 1 1/2 tbsp hoisin sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp maple syrup
  • 2 cloves garlic, grated
  • 1/2 inch ginger, grated
  • 1 tsp sesame oil, optional
  • 1/2 cup vegetable broth
  • 1/4 cup vegan mayo or a thick unsweetened plant-based yogurt
  • 1 tbsp sriracha
  • Juice of half a lime
  • 1 tsp maple syrup
  • Salt to taste
  • 3/4 cup shredded cabbage
  • 3/4 cup shredded carrots
  • Juice of half a lime
  • 1/2 tsp salt
  • 1 tsp sugar or maple syrup
  • 3/4 cup greens of choice
  • Cilantro, optional
  • 3 burrito wraps

Instructions

  1. Preheat your oven to 425°F.
  2. Crumble or shred your tofu using a box grater over a parchment-lined baking sheet.
  3. Combine the shredded tofu with 1 tablespoon of soy sauce, garlic powder, and 1 tablespoon of cornstarch; toss to coat.
  4. Spread the tofu mixture in a single layer on the baking sheet and bake for 15 minutes.
  5. Flip the tofu and bake for another 10 minutes until golden and crispy.
  6. Combine the shredded cabbage and carrots in a container with lime juice, salt, and sugar; toss to coat.
  7. Whisk together the mayo, sriracha, lime juice, and maple syrup to create a creamy dressing.
  8. Prepare the stir-fry sauce by combining the remaining soy sauce, hoisin sauce, rice wine vinegar, maple syrup, grated garlic, ginger, sesame oil (if using), and vegetable broth in a pan over medium-low heat.
  9. Bring the sauce to a gentle simmer, stir in the cornstarch mixed with water, and thicken slightly.
  10. Add the baked tofu to the thickened sauce, tossing to coat evenly.
  11. Assemble your wraps with the sriracha mayo, greens, pickled veggies, cilantro, and a third of the tofu mixture.
  12. Roll the tortilla up tightly and toast on a skillet for a crispy exterior if desired.

Notes

Use super firm tofu for the best texture. Ensure the tofu is properly drained and baked for optimal crispiness.
