- 2 medium sweet potatoes, diced
- 1 tablespoon extra virgin olive oil
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- 2 teaspoons dried rosemary
- 1 lb. lean ground beef
- 1 medium yellow onion, diced
- 1 14.5 oz can vegetable broth
- ½ cup heavy cream
- 1 ⅓ cup instant rice
- 2 cups shredded cheddar cheese
- 2 teaspoons parsley
Instructions
- Preheat oven to 400°F.
- Peel and dice sweet potatoes into 1-inch cubes.
- Place potato chunks in a casserole dish, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, and rosemary.
- Toss the potatoes to coat evenly.
- Roast sweet potato cubes for 30 minutes.
- Meanwhile, place a skillet on medium-high heat and add ground beef. Brown for 5-7 minutes.
- Add diced onion to the browned beef and sauté for 3-5 minutes.
- Remove the casserole dish from the oven.
- Add broth, heavy cream, rice, and beef/onion mixture to the sweet potatoes.
- Stir well and pat the mixture evenly into the dish.
- Cover with foil and return to the oven for 15 minutes.
- Remove the foil, top with cheese, and bake for about 10 more minutes.
- Allow to rest for 10-15 minutes before serving.
- Add parsley flakes before enjoying!
Notes
Make sure to roast the sweet potatoes long enough to develop caramelization for the best flavor.
