Description

A comforting and hearty casserole featuring roasted sweet potatoes, ground beef, and a cheesy topping, perfect for busy nights.


Ingredients

  • 2 medium sweet potatoes, diced
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • 2 teaspoons dried rosemary
  • 1 lb. lean ground beef
  • 1 medium yellow onion, diced
  • 1 14.5 oz can vegetable broth
  • ½ cup heavy cream
  • 1 ⅓ cup instant rice
  • 2 cups shredded cheddar cheese
  • 2 teaspoons parsley

Instructions

  1. Preheat oven to 400°F.
  2. Peel and dice sweet potatoes into 1-inch cubes.
  3. Place potato chunks in a casserole dish, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, and rosemary.
  4. Toss the potatoes to coat evenly.
  5. Roast sweet potato cubes for 30 minutes.
  6. Meanwhile, place a skillet on medium-high heat and add ground beef. Brown for 5-7 minutes.
  7. Add diced onion to the browned beef and sauté for 3-5 minutes.
  8. Remove the casserole dish from the oven.
  9. Add broth, heavy cream, rice, and beef/onion mixture to the sweet potatoes.
  10. Stir well and pat the mixture evenly into the dish.
  11. Cover with foil and return to the oven for 15 minutes.
  12. Remove the foil, top with cheese, and bake for about 10 more minutes.
  13. Allow to rest for 10-15 minutes before serving.
  14. Add parsley flakes before enjoying!

Notes

Make sure to roast the sweet potatoes long enough to develop caramelization for the best flavor.
