Description

Delicious and fluffy pancakes made with rolled oats and sweet potato, perfect for a warm breakfast.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup mashed sweet potato
  • 1 cup milk (or non-dairy alternative)
  • 2 tablespoons protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 tablespoon honey or maple syrup (optional)
  • 1/4 teaspoon salt
  • Cooking spray or oil for the pan

Instructions

  1. In a blender, combine rolled oats, sweet potato, milk, protein powder, baking powder, cinnamon, honey or maple syrup, and salt.
  2. Blend until smooth.
  3. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
  4. Pour a ladleful of batter onto the skillet and cook for 2–3 minutes, until bubbles form on the surface.
  5. Flip and cook for an additional 2–3 minutes until golden brown.
  6. Repeat with the remaining batter. Serve warm with your choice of toppings.

Notes

Best eaten fresh the same day, but can be frozen for up to 3 months. Store in an airtight container in the fridge for 3-4 days.
