Description

Deliciously layered sweet potato stacks that are crispy on the edges and tender inside, perfect for meal prep.


Ingredients

Scale
  • 2 large sweet potatoes
  • 4 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • Garlic powder
  • Fresh herbs (like thyme or rosemary)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and slice the sweet potatoes into thin rounds, about 1/8 inch thick.
  3. Combine the sweet potato slices with melted butter, salt, pepper, and garlic powder in a mixing bowl.
  4. Stack the sweet potato rounds in a layered fashion in a baking dish, adding some fresh herbs in between layers.
  5. Cover the dish with foil and bake for 30-35 minutes until tender.
  6. Remove the foil in the last 10 minutes to get a crispy top.
  7. Serve warm and enjoy!
