- 2 large sweet potatoes
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
- Garlic powder
- Fresh herbs (like thyme or rosemary)
Instructions
- Preheat your oven to 400°F.
- Peel and slice the sweet potatoes into thin rounds, about 1/8 inch thick.
- Combine the sweet potato slices with melted butter, salt, pepper, and garlic powder in a mixing bowl.
- Stack the sweet potato rounds in a layered fashion in a baking dish, adding some fresh herbs in between layers.
- Cover the dish with foil and bake for 30-35 minutes until tender.
- Remove the foil in the last 10 minutes to get a crispy top.
- Serve warm and enjoy!
