Description

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 pound ground turkey
  • 1 cup roasted corn
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the diced onion in a bit of oil over medium heat until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Incorporate the ground turkey, breaking it apart as it browns, which takes about 6-8 minutes.
  4. Stir in the diced sweet potatoes, roasted corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  5. Bring the mixture to a simmer, cover, and let it cook for around 25-30 minutes until the sweet potatoes are tender.
