- 2 medium sweet potatoes, peeled and diced
- 1 pound ground turkey
- 1 cup roasted corn
- 1 can (14.5 oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot, sauté the diced onion in a bit of oil over medium heat until translucent, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Incorporate the ground turkey, breaking it apart as it browns, which takes about 6-8 minutes.
- Stir in the diced sweet potatoes, roasted corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a simmer, cover, and let it cook for around 25-30 minutes until the sweet potatoes are tender.
Notes
Serve with sour cream and shredded cheese for extra creaminess and flavor.
