Ingredients

  • 2 tablespoons balsamic vinegar

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 avocado, sliced

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Mix balsamic vinegar, olive oil, garlic powder, salt, and pepper until combined.
  3. Marinate the tofu cubes in the dressing for at least 30 minutes, stirring occasionally.
  4. Cook the marinated tofu over medium heat until golden brown on all sides (about 5-7 minutes).
  5. Combine salad greens, cherry tomatoes, cucumber, red bell pepper, and avocado in a large bowl.
  6. Top the salad with the cooked tofu.
