Description

A speedy method to achieve fluffy baked potatoes with crisp skins in a fraction of the usual time. Perfect for weeknight dinners or when you’re short on time.

Ingredients

  • Large russet potatoes (about 8-10 ounces each)
  • Olive oil or melted butter
  • Salt
  • Black pepper (optional)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Thoroughly wash and scrub the potatoes and dry them completely.
  3. 3. Prick each potato several times with a fork.
  4. 4. Microwave the potatoes on high for 3-5 minutes to soften them.
  5. 5. Carefully rub each potato all over with olive oil or melted butter.
  6. 6. Season generously with salt (and pepper, if using).
  7. 7. Place potatoes directly on the oven rack.
  8. 8. Bake for 20-30 minutes, or until skins are crisp and potatoes are tender.
  9. 9. Let cool slightly before serving.

Notes

Store cooled baked potatoes in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven for best results with crispy skin.
