Ingredients
- Large russet potatoes (about 8-10 ounces each)
- Olive oil or melted butter
- Salt
- Black pepper (optional)
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. Thoroughly wash and scrub the potatoes and dry them completely.
- 3. Prick each potato several times with a fork.
- 4. Microwave the potatoes on high for 3-5 minutes to soften them.
- 5. Carefully rub each potato all over with olive oil or melted butter.
- 6. Season generously with salt (and pepper, if using).
- 7. Place potatoes directly on the oven rack.
- 8. Bake for 20-30 minutes, or until skins are crisp and potatoes are tender.
- 9. Let cool slightly before serving.
Notes
Store cooled baked potatoes in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven for best results with crispy skin.
