  • 1 teaspoon garlic powder
  • 1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (for garnish)
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. 1. Pat chicken dry. Season chicken with salt, pepper, Italian seasoning, and garlic powder.
  2. 2. Optional: Sear seasoned chicken in olive oil in a skillet for 2-3 minutes per side. Place in slow cooker.
  3. 3. Combine sun-dried tomatoes, minced garlic, chicken broth, and optional red pepper flakes in a bowl. Pour over chicken.
  4. 4. Cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is cooked through.
  5. 5. Remove chicken from slow cooker. Shred or slice.
  6. 6. Stir heavy cream and Parmesan cheese into the slow cooker liquid. Cook for 10-15 minutes to thicken, if needed.
