- 1.5 – 2 pounds boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil (for garnish)
- Optional: 1/4 teaspoon red pepper flakes
Instructions
- 1. Pat chicken dry. Season chicken with salt, pepper, Italian seasoning, and garlic powder.
- 2. Optional: Sear seasoned chicken in olive oil in a skillet for 2-3 minutes per side. Place in slow cooker.
- 3. Combine sun-dried tomatoes, minced garlic, chicken broth, and optional red pepper flakes in a bowl. Pour over chicken.
- 4. Cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is cooked through.
- 5. Remove chicken from slow cooker. Shred or slice.
- 6. Stir heavy cream and Parmesan cheese into the slow cooker liquid. Cook for 10-15 minutes to thicken, if needed.
- 7. Return chicken to slow cooker, coating in sauce.
- 8. Let sit for 5-10 minutes. Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave.
