Ingredients

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, halved or quartered if large
  • 4 tablespoons olive oil, divided
  • 6 cloves garlic, minced, divided
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon butter (optional, for finishing)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a large bowl, toss the prepared baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, rosemary, thyme, smoked paprika, salt, and pepper. Ensure the potatoes are evenly coated. Spread them in a single layer on a large baking sheet.
  3. 3. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the potatoes are fork-tender and starting to crisp up.
  4. 4. While the potatoes are roasting, pat the steak cubes dry with paper towels. In the same bowl used for the potatoes, toss the steak cubes with the remaining 2 tablespoons of olive oil, the remaining minced garlic, salt, and pepper.
  5. 5. Once the potatoes have roasted for about 20-25 minutes, remove them from the oven. Increase the oven temperature to 425°F (220°C) and carefully move the potatoes to one side of the baking sheet or transfer them to a bowl. Place the steak cubes in a single layer on the now empty half of the baking sheet (or in a separate cast-iron skillet or oven-safe pan). Sear over medium-high heat on the stovetop or place the baking sheet under the broiler for 2-3 minutes per side, or until browned and seared.
  6. 6. Once the steak is seared, return the baking sheet (or skillet) to the oven. Continue to cook for another 5-8 minutes for medium-rare, or longer to your desired doneness. For an optional touch of richness, add the tablespoon of butter to the pan during the last minute of cooking.
  7. 7. Remove from the oven, let the steak bites rest for a few minutes, and garnish with fresh parsley if desired. Serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or air fryer for best texture.
