Description

Ingredients

  • 2 pounds Russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: Pinch of cayenne pepper or grated Parmesan cheese

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Wash and cut potatoes into ½ to ¾ inch thick wedges.
  3. 3. Soak wedges in cold water for 15-20 minutes to remove excess starch.
  4. 4. Drain and thoroughly pat dry with paper towels.
  5. 5. Toss dry wedges with olive oil in a large bowl.
  6. 6. In a small bowl, mix spices (paprika, garlic powder, onion powder, oregano, thyme, salt, pepper, optional cayenne).
  7. 7. Sprinkle spice mix over oiled wedges and toss to coat evenly.
  8. 8. Arrange wedges in a single layer on a baking sheet (use two if needed). Do not overcrowd.
  9. 9. Bake for 20-25 minutes, then flip wedges.
  10. 10. Continue baking for another 15-25 minutes, or until golden brown and tender. Optionally add Parmesan cheese in the last 5 minutes.
  11. 11. Let rest for a few minutes before serving.

Notes

For maximum crispiness, ensure potatoes are dried thoroughly. Reheat leftovers in the oven for best texture.
