Description

A comforting and hearty soup filled with flavorful ground turkey meatballs, vegetables, and optional pasta.


Ingredients

Scale
  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 2 cups mixed vegetables (carrots, celery, peas)
  • 1 cup pasta (optional)
  • Fresh parsley for garnish

Instructions

  1. Combine the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper in a large bowl.
  2. Mix until fully combined, then form into meatballs.
  3. Bring the chicken broth to a boil in a large pot.
  4. Add the meatballs carefully to the boiling broth.
  5. Add the mixed vegetables and pasta, if using.
  6. Reduce the heat and let it simmer for about 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.
  7. Serve hot, garnished with fresh parsley.

Notes

Best eaten fresh the same day. Reheats gently on the stovetop with a splash of broth.
