- 1 whole chicken
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 inch piece of ginger, grated
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- Heat oil in a large pot and sauté the onion, carrots, and celery until softened, about 5-7 minutes.
- Add the garlic, ginger, and turmeric, stirring for 1 minute until fragrant.
- Add the whole chicken and chicken broth, then bring to a boil.
- Reduce the heat and simmer for about 1 hour until the chicken is cooked through.
- Remove the chicken, shred the meat, and return it to the pot.
- Season with salt and pepper to taste.
- Garnish with fresh herbs before serving.
Notes
Best eaten fresh the same day. Store in the fridge for up to 3 days. Reheat on the stove with a splash of broth if needed.
