Ingredients

- 1 cup seitan, sliced into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon cornstarch (optional, for thickening)
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the sliced seitan and cook for about 5 minutes, stirring occasionally, until browned and slightly crispy.
- Stir in the garlic and onion, cooking until the onion becomes translucent, about 3 minutes.
- Add the red and green bell peppers and sauté for another 4 minutes, allowing them to remain crisp.
- Pour in the soy sauce, stirring well to coat the seitan and vegetables. If using, mix the cornstarch with a tablespoon of water, then add it to the skillet to thicken the sauce.
- Season with salt and pepper, adjusting to taste, then remove from heat.
Notes
Serve over steamed rice or quinoa for a complete meal. Perfect for busy weeknights.
