  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano and thyme)

  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Cut the potatoes into roughly 1-inch chunks, ensuring similar sizes for even cooking. Do not peel if you prefer.
  3. 3. Place potato chunks in a large bowl, drizzle with 2 tablespoons of olive oil, and toss to coat.
  4. 4. Spread potatoes in a single layer on a large baking sheet. Avoid overcrowding.
  5. 5. Roast for 20-25 minutes, until fork-tender and starting to brown.
  6. 6. While potatoes roast, whisk together melted butter, remaining 1 tablespoon olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper in a small bowl.
  7. 7. Increase oven temperature to 425°F (220°C).
  8. 8. Remove potatoes from oven and return them to a bowl. Pour the garlic Parmesan mixture over the warm potatoes and toss to coat each piece thoroughly.
