Description

Ingredients

Scale
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup spinach or kale
  • 1 tsp dried thyme
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Sauté the onion and garlic over medium heat until softened, about 5 minutes.
  2. Add the carrots, celery, and bell pepper, cooking until they begin to soften, roughly another 5 minutes.
  3. Pour in the vegetable broth and diced tomatoes.
  4. Stir in the thyme, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the spinach or kale and cook for an additional 5 minutes until wilted.
  7. Serve hot and enjoy!
