Ingredients

- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup spinach or kale
- 1 tsp dried thyme
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Sauté the onion and garlic over medium heat until softened, about 5 minutes.
- Add the carrots, celery, and bell pepper, cooking until they begin to soften, roughly another 5 minutes.
- Pour in the vegetable broth and diced tomatoes.
- Stir in the thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the spinach or kale and cook for an additional 5 minutes until wilted.
- Serve hot and enjoy!
