Ingredients

- 1 pound Italian sausage
- 4 slices bacon, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 large potatoes, diced
- 2 cups kale, chopped
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- Cook the bacon over medium heat until crispy. Remove and set aside, allowing the fat to remain.
- Add the Italian sausage and cook until browned.
- Add the chopped onion and minced garlic, cooking until translucent, about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the diced potatoes, cooking until tender, approximately 10–15 minutes.
- Stir in the chopped kale and simmer for a few minutes until wilted.
- Add the coconut milk and cooked bacon back into the pot, stirring until heated through.
- Season with salt and pepper to taste before serving.
Notes
For added flavor, avoid rushing the browning process of the sausage and add coconut milk just before serving.
