- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley, plus more for garnish

Instructions
- 1. Place chicken breasts in a large pot, cover with water, bring to a boil, then simmer for 15-20 minutes until cooked through. Remove chicken, set aside to cool. Reserve cooking liquid.
- 2. Heat olive oil in the same pot over medium heat. Add onion, carrots, and celery; cook until softened (8-10 minutes).
- 3. Add garlic and cook for 1 minute until fragrant.
- 4. Pour in chicken broth, add thyme, rosemary, salt, and pepper. Bring to a simmer, reduce heat, cover, and cook for 15-20 minutes.
- 5. Shred the cooked chicken.
- 6. Stir in softened cream cheese and sour cream until melted and incorporated.
- 7. Add shredded chicken to the pot, heat through for 5-10 minutes.
- 8. Stir in fresh parsley; taste and adjust seasoning.
- 9. Ladle into bowls and garnish with parsley and chives if desired.
