Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 to 1.5 pounds total)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley, plus more for garnish
  • Optional: 1/4 cup chopped fresh chives for garnish

Instructions

  1. 1. Place chicken breasts in a large pot, cover with water, bring to a boil, then simmer for 15-20 minutes until cooked through. Remove chicken, set aside to cool. Reserve cooking liquid.
  2. 2. Heat olive oil in the same pot over medium heat. Add onion, carrots, and celery; cook until softened (8-10 minutes).
  3. 3. Add garlic and cook for 1 minute until fragrant.
  4. 4. Pour in chicken broth, add thyme, rosemary, salt, and pepper. Bring to a simmer, reduce heat, cover, and cook for 15-20 minutes.
  5. 5. Shred the cooked chicken.
  6. 6. Stir in softened cream cheese and sour cream until melted and incorporated.
  7. 7. Add shredded chicken to the pot, heat through for 5-10 minutes.
  8. 8. Stir in fresh parsley; taste and adjust seasoning.
  9. 9. Ladle into bowls and garnish with parsley and chives if desired.

Notes

Allow soup to cool completely before storing in airtight containers in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave. Add a splash of broth or milk if soup is too thick after refrigeration.
