Description

A quick and nutritious wrap capturing the flavors of summer with grilled zucchini, creamy feta, and hearty chickpeas.


Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 large whole wheat tortillas

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the zucchini rounds in olive oil, salt, and pepper before placing them on the grill.
  3. Grill the zucchini for about 4–5 minutes per side or until they exhibit grill marks and soften.
  4. In a bowl, mix the chickpeas and crumbled feta, then add the grilled zucchini after letting it cool slightly.
  5. In a separate bowl, combine Greek yogurt and dill for the herbed dressing.
  6. Spread the yogurt mixture onto each tortilla and layer on the zucchini-chickpea-feta mixture.
  7. Roll the tortillas tightly and slice them in half to serve.

Notes

Ensure your grill is properly heated to avoid sticking while grilling zucchini. Warm tortillas in the microwave to make them more pliable.
