Instructions
- Preheat the oven to 400°F (200°C).
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk and butter until smooth.
- Sauté the onion in a little butter until softened.
- Stir the sautéed onion and cheese into the mashed potatoes, seasoning with salt and pepper.
