Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup artichoke hearts, drained and chopped
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant.
  3. Stir in the chopped spinach and artichokes, cooking until the spinach is just wilted.
