Description

A hearty one-pan casserole with layers of tender potatoes, seasoned ground beef, and melted cheese that’s perfect for busy weeknight dinners.


Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 3 pounds russet potatoes, peeled and sliced ¼-inch thick
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ¼ cup fresh chives, chopped (for garnish)
  • 2 tablespoons butter, cut into small pieces

Instructions

  1. 1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add onion and cook 4-5 minutes until softened.
  3. 3. Add minced garlic and cook 30 seconds more.
  4. 4. Add ground beef, breaking up with spoon. Cook 8-10 minutes until browned. Drain excess fat.
  5. 5. Season beef with 1 teaspoon salt, ½ teaspoon pepper, paprika, thyme, and garlic powder.
  6. 6. In a bowl, whisk together cream of mushroom soup and sour cream until smooth.
  7. 7. Stir 1 cup cheddar cheese into soup mixture.
  8. 8. Layer half the potatoes in baking dish, overlapping slightly. Season with remaining salt and pepper.
  9. 9. Spread beef mixture over potatoes evenly.
  10. 10. Pour half the soup mixture over beef layer.
  11. 11. Layer remaining potatoes on top and season.
  12. 12. Pour remaining soup mixture over top layer of potatoes.
  13. 13. Dot with butter pieces.
  14. 14. Cover with foil and bake 45 minutes.
  15. 15. Remove foil and bake 20-25 minutes until potatoes are tender.
  16. 16. Top with remaining cheeses and bake 10-15 minutes until melted and bubbly.
  17. 17. Let rest 10 minutes before serving.
  18. 18. Garnish with fresh chives.

Notes

Store leftovers in refrigerator up to 4 days. Reheat gently in oven or microwave. Can be frozen up to 3 months.
