Description

A creamy one-pot pasta dish with garlic, parmesan, spinach, and mushrooms, perfect for busy weeknights.


Ingredients

  • 8 oz pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add minced garlic and sliced mushrooms, sauté for about 5 minutes until tender.
  3. Stir in the pasta and add enough water or broth to cover it completely.
  4. Bring to a boil, then reduce heat to a simmer, cooking until al dente.
  5. Once cooked, stir in the spinach and heavy cream until the spinach wilts and the cream bubbles gently.
  6. Mix in the Parmesan cheese until melted and creamy.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley if desired.

Notes

Stir the pasta occasionally while it cooks to prevent sticking. Substitute kale for spinach for a different flavor and texture.
