- 8 oz pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add minced garlic and sliced mushrooms, sauté for about 5 minutes until tender.
- Stir in the pasta and add enough water or broth to cover it completely.
- Bring to a boil, then reduce heat to a simmer, cooking until al dente.
- Once cooked, stir in the spinach and heavy cream until the spinach wilts and the cream bubbles gently.
- Mix in the Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
Notes
Stir the pasta occasionally while it cooks to prevent sticking. Substitute kale for spinach for a different flavor and texture.
