Ingredients

  • 2 lbs baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese
  • 1/2 cup cream cheese
  • 1/4 cup olive oil (for whipped feta)
  • 1 tablespoon lemon juice
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby potatoes with olive oil, garlic powder, oregano, salt, and pepper until they are well coated.
  3. Spread the potatoes evenly on a baking sheet, giving them room to roast and crisp up nicely.
  4. Roast for 25-30 minutes, or until they are golden brown and tender, turning once for even cooking.
  5. Meanwhile, in a blender, combine feta cheese, cream cheese, olive oil, and lemon juice. Blend until smooth and creamy.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly for easier handling.
  7. Serve the roasted potatoes on a platter with a generous dollop of whipped feta on top.
  8. Garnish with fresh herbs if desired, and enjoy!
